Rhubarb Crumble
Rhubarb is such a delicious reminder that spring is here and warmer days are coming!
Rhubarb is packed with anti-bacterial and anti-inflammatory antioxidants, so definitely enjoy it as much as you can while the season is on (8-10 weeks, FYI!).
Here is our favorite rhubarb crumble recipe. It’s such an easy dessert to make, and as the seasons progress you can swap out for different fruits.
Ingredients (serves 4)
500g rhubarb, cut into 5cm long pieces
100g caster sugar
150g flour
85g unsalted butter
50g brown sugar
Method
Chop the rhubarb into 5cm long pieces
Add to a saucepan, with the caster sugar
Cover with water, and simmer for 15mins
Meanwhile, pre-heat the oven to 180C
In a bowl mix together the flour, brown sugar, and crumble in the butter, mixing with your fingers, until you have a crumb-like consistency.
Drain the rhubarb and put into a baking dish
Poor over the flour mixture
Bake for 30mins
