Christmas Cookies
These soft cookies will have you feeling festive in no time.
Line up some Christmassy cookie cutters, and ice them after for some extra Christmas cheer!
Ingredients (makes 10-12)
200g flour
100g sugar
1/2 tsp bicarbonate of soda
2 1/2 tsp of ground ginger
1 tsp cinnamon
1 pinch salt
100g unsalted butter, diced
2 tbsp honey or agave
1 egg yolk
Method
Sift the dry ingredients into a bowl and mix together.
Pour into a food processor, and add the butter. Pulse until the mixture resembles a fine sand.
In a separate bowl mix together the honey and the egg yolk, then pour into the food processor. Pulse until well combined.
Roll the mixture into a ball and chill for 2 hours.
Preheat your oven to 180C, for a soft finish.
Roll out your dough, on a lightly flour-dusted surface. Make sure it is no thinner than 5mm.
Use festive shapes to cut out your biscuits. Place them on parchment paper and bake for c. 12 mins, or until the edges start to brown.
