Apple Pie
With Thanksgiving just around the corner, now is the time to share our easy and quick apple pie recipe.
And nothing smells quite as much like the holidays as apple pie! This can be as elaborate (pick your own apples and make your own pastry) or as quick (store buy everything you need) as you choose. Either way, it’s going to be delicious and great way to end your meal!
Ingredients (serves 8)
4 apples (Granny Smith are great as they are tart, but if you prefer a softer, sweeter taste use red apples, and remember to adapt how much sugar you put in)
1 lemon
1 heaped teaspoon cinnamon
3 heaped tablespoons flour
120 g brown sugar
1 egg
dash of milk
Method
Preheat your over to 230C
Roll out you pastry and put it in your pie dish. Use a fork to prick the bottom. Put the bottom of the pie in the over for 7 mins, to avoid having a soggy bottom
Peel, quarter, and dice the apples and place in a mixing bowl
Squeeze the lemon juice over the apples and set to one side
In a separate bowl mix together the flour, sugar and cinnamon
Combine both bowls and pour onto the pre-baked pastry
Now here is where you can get a little fancy! Either you can simply place the second pastry over the top, or you can do a lattice top.
If you lay the pastry on top, make sure that you seal it well all around, and make some slits in the top of the pastry.
If you go for a latticed top, the cut your pastry into 12 even strips. Lay out 6 of them vertically, and pull every other one back. Lay your first strip of pastry horizontally, and alternate placing the vertical pastry over or under. Repeat with the remaining pieces of pastry, or until your pie is sufficiently covered.Beat together one egg with a dash of milk, then brush the mixture over the pastry
Put in the oven at 230C for 10 minutes, then reduce the heat to 175C for a further 30 minutes
Serve warm or cold, alone or with ice cream. Say yuuuum!
For the pastry, we use a simple shortcrust pastry. Below is a simple recipe if you want to make it yourself
Ingredients
220 g flour
100 g unsalted butter
salt
water
Method
Sift the flour into a mixing bowl
Dice the butter and add to the flour
Rub it in and mix it with your fingers, until it has the consistency of fine bread crumbs
Put in a pinch of salt, then add 2 or 3 tablespoons of water and mix until it is firm
Knead the dough briefly. If not using immediately, wrap it in cling film and set to chill in the fridge
