Raspberry Clafoutis
This fresh and light dessert will take you no time at all, and is a delicious way to end your meal. You can do this with a host of other fruits, but remember that if you are using more bitter fruits, to add an apple to counter the acidity.
You can also use frozen fruit in this recipe.
In this recipe, we suggest making it in a regular cake dish, but this can also be made into individual ramekins. The quantities here would fill six.
Ingredients (serves 6)
400g raspberries
80g sugar
60g flour
3 eggs
335ml milk
a few drops of vanilla extract
a pinch of salt
Method
Preheat your oven to 210C
Place your raspberries in your buttered dish
In a bowl, mix together the sugar, flour and salt. Add the eggs one by one and mix them in, adding the milk and a few drops of vanilla extract
Pour the mixture onto the raspberries, and put in the oven for 10mins at 210C, then reduce the heat to 180C for another 20mins
Serve cold or warm
