Stuffed Peppers
These stuffed peppers are great as a standalone, or alongside any meat that you might serve.
They are also delicious cold the next day, and are perfect for popping in a storage box (click the link to see our favorites!) to take to work for lunch.
Ingredients (serves 4)
4 peppers
250g potatoes
4-5 tablespoons of pesto (use our recipe!), depending on your taste
250g feta cheese
salt and pepper, to taste
Method
Heat your oven to 200C.
Peel and dice the potatoes into small-ish pieces, then boil for 10 minutes.
Once drained, mix in a bowl with the pesto, and the diced or crumbled feta. Add salt and pepper to taste.
Halve the peppers, removing the seeds and stalks. Rub the skins of the peppers with olive oil, then place in your oven dish.
Fill the peppers with the mixture from the bowl.
Once your oven is hot enough, place the peppers in the oven for 40 mins.
