Zucchini Frittata
Omelette!
This brunch classic is one of our favorite recipes to make at home. An easy way to eat your proteins and greens together! And before placing a pan on the stove, what if we told you that there was another way, that does not require any flipping which will turn your kitchen into a mess...?
Ingredients (serves 4)
8 medium eggs
3 large zucchini (approximately 450-500 g)
1/1/2 oignon
100g grated Grana Padano DOP
20ml extra virgin olive oil
2 sprigs thyme
salt and pepper, to taste
Method
Preheat the oven to 200C
Wash the zucchini, remove the ends and slice them, using a mandoline
Pan fry the zucchini and oignon with thyme and add a tiny bit of salt and pepper. Cook until golden
Pour the mixture in a sieve and let it drain completely
In a large bowl, break the eggs and add the parmesan. Season with a bit salt and some pepper, and whisk
Once the zucchini are fully drained, add to the eggs and mix until well combined
In a large baking tray (if possible 25cm high, or more) place a parchment paper before pouring the mix
Place the baking tray in the oven and let cook for about 40min
Once golden, remove from the oven and cut into squares
