Baked Cod
Fishy...
As the holiday season is behind us, we're all trying to go back to a healthier(-ish!) lifestyle. Exercising, reading, and eating well are usually the top three on the list, right? Here is a recipe to stay true to your new year's resolutions while still enjoying your dinner.
Ingredients (serves 4)
4 cod fillets
2 tbsp olive oil
2 tsp garlic powder
2 tsp dried rosemary
2 tsp dried thyme
2 tsp dried oregano
salt and pepper, to taste
the juice and peel of half a lemon
Method
Preheat the oven to 200C
Combine the olive oil, lemon juice and zest, herbs, garlic powder, salt and pepper in a large bowl
Place the cod fillets in a baking dish and pour the olive oil mix on top. Let the fish marinate for 10 minutes
Bake for 15-20 minutes (or until the fish is cooked through) and enjoy!
