White Bean Dip
Still have this white bean can in the back of your pantry?
Here's an idea... why don't you make a white bean dip to serve tonight at dinner? It will be great served with fish, or spread on toasted bread if you are eating soup. Check out the below recipe and let us know if you like it ๐
Ingredients (serves 2)
a can of white beans (approximately 250g)
2 cloves of garlic, roasted with skin removed (if you donโt have time, better use some garlic powder as it will be more digest!)
30g roasted pine nuts
the juice of a lemon
the zest of a lemon
1 tbsp extra virgin olive oil
1/2 tsp paprika
1/2 tsp salt
2 tbsp cold water
a sprig of fresh parsley (to taste), and extra to serve
1 tsp extra virgin olive oil, to serve
Method
In a blender, mix all the ingredients at high speed, until you obtain a smooth texture
Pour the extra virgin olive oil, and add an extra sprig of parsleyโฆ and serve!
