Vegetarian Caesar Salad
Who doesn’t like a good old Caesar salad? Oh that’s right, non-meat eaters! Well well, vegetarian friends, we have the perfect recipe for you featuring kale and chickpeas. Bon appétit!
Ingredients (serves 2)
For the salad:
100g kale (any variety)
250g cooked chickpeas, drained
1 tbsp olive oil
3 tbsp parmesan
A pinch of salt
garlic powder and paprika (to taste)
For the dressing:
3 tbsp olive oil
1 tbsp tahini
the juice of 1/2 lemon
1,5 tbsp parmesan
salt, pepper, and garlic powder (to taste)
3/4 tbsp Dijon mustard
Method
Clean and cut the kale. Drain well and place in a large serving dish
Prepare the dressing combining all ingredients from the above list and mix well
In a fry pan, pour the olive oil and cook the chickpeas at medium heat
Add salt, garlic powder and paprika and stir continuously until chickpeas start to golden.
Then add the parmesan while stirring so the cheese doesn't create a thick paste on only a small portion of the chickpeas
Once ready, let cool for a few minutes and place on top of the kale
Give the salad a good mix and serve
