Vegetarian Caesar Salad

Who doesn’t like a good old Caesar salad? Oh that’s right, non-meat eaters! Well well, vegetarian friends, we have the perfect recipe for you featuring kale and chickpeas. Bon appétit!

Ingredients (serves 2)

For the salad:

  • 100g kale (any variety)

  • 250g cooked chickpeas, drained

  • 1 tbsp olive oil

  • 3 tbsp parmesan

  • A pinch of salt

  • garlic powder and paprika (to taste)

For the dressing:

  • 3 tbsp olive oil

  • 1 tbsp tahini

  • the juice of 1/2 lemon

  • 1,5 tbsp parmesan

  • salt, pepper, and garlic powder (to taste)

  • 3/4 tbsp Dijon mustard

Method

  • Clean and cut the kale. Drain well and place in a large serving dish

  • Prepare the dressing combining all ingredients from the above list and mix well

  • In a fry pan, pour the olive oil and cook the chickpeas at medium heat

  • Add salt, garlic powder and paprika and stir continuously until chickpeas start to golden.

  • Then add the parmesan while stirring so the cheese doesn't create a thick paste on only a small portion of the chickpeas

  • Once ready, let cool for a few minutes and place on top of the kale

  • Give the salad a good mix and serve
