Baked Apricots with Rosemary
An easy yet yummy way to end your summer dinner!
Apricots bring an essential source of minerals such as vitamin A, E and beta carotene - crucial for antioxidant intake, promoting eye health, but also boosting bone and teeth health, and preventing bad cholesterol. But they are also delicious fruits we unfortunately do not get to enjoy all year long - so when summer hits, we make sure to make the most out of it!
Ingredients (serves 4)
10 apricots
2 tsp vanilla extract
120g of honey (liquid)
2 sprigs of fresh rosemary
Method
Preheat your oven to 200C
Wash the apricots, cut them in half and remove the pit
Place the apricots in a small gratin dish, skin side down
Wash and chop the rosemary sprigs
In a bowl, mix the honey, vanilla extract, and the rosemary. Then coat the apricots with the honey mixture before baking for 10 to 15 minutes
Out of the oven, let sit for a few minutes, and serve lukewarm on top of a fior di latte ice cream scoop!
