Melon and Fig Salad
Summer may be coming to a close, but that’s not necessarily a bad thing, as it means that figs are officially in season!
Today’s recipe brings together summer fruit and tasty salty flavors, for an all round delicious meal.
Ingredients (serves 4-6)
1 small cantaloupe/ charentais melon
6 figs figs, cut in half
4 thin slices of prosciutto
2 balls of mozzarella, roughly torn into pieces
1 handfuls of torn basil
1 small handful of mint, roughly chopped
2 tablespoons of extra virgin olive oil
coarse sea salt
freshly ground peppers
Method
Arrange the melon, figs, prosciutto and mozzarella on a platter. The melon you can leave in slices, as we did in the photo, or dice. The prosciutto can be torn into smaller strips.
Drizzle the oil, then add salt and pepper to taste.
Finally, sprinkle on the herbs.
