Melon and Fig Salad

Summer may be coming to a close, but that’s not necessarily a bad thing, as it means that figs are officially in season!

Today’s recipe brings together summer fruit and tasty salty flavors, for an all round delicious meal.

Ingredients (serves 4-6)

  • 1 small cantaloupe/ charentais melon

  • 6 figs figs, cut in half

  • 4 thin slices of prosciutto

  • 2 balls of mozzarella, roughly torn into pieces

  • 1 handfuls of torn basil

  • 1 small handful of mint, roughly chopped

  • 2 tablespoons of extra virgin olive oil

  • coarse sea salt

  • freshly ground peppers

Method

  • Arrange the melon, figs, prosciutto and mozzarella on a platter. The melon you can leave in slices, as we did in the photo, or dice. The prosciutto can be torn into smaller strips.

  • Drizzle the oil, then add salt and pepper to taste.

  • Finally, sprinkle on the herbs.
