Cucumber Dill Salad
If you are looking for a side salad that will go with pretty much everything, then look no further!
Cucumber salads give the perfect snap and freshness that you need for any summer meal.
Ingredients (serves 6)
500g cucumbers, thinly sliced
1 small red onion, thinly sliced
50g dill, chopped
2 teaspoons salt
2 teaspoons sugar
2 teaspoons red wine viengar
2 teaspoons white wine vinegar
120ml water
a handful of finely sliced radishes (optional)
Method
Place the sliced cucumbers in a colander with the salt and sugar. Put it in a bowl and set it in your fridge for 1 hour, to extract the excess water. This will keep your cucumbers nice and crunchy!
Drain the cucumbers, then mix with the other ingredients.
You can either serve immediately, or place in the fridge, thus allowing the cucumbers to pickle.
