Sautéed Green Beans and Cherry Tomatoes
As an alternative to green bean casserole for Thanksgiving this year, we’re bringing you a fresh and tasty alternative.
Ingredients (serves 4)
500g green beans
250g cherry tomatoes, chopped in half
1 chopped shallot
olive oil
a pinch of salt
pepper to taste
Method
Bring water to the boil, and put the green beans in for 4 minutes. Drain and put to one side
In a skillet heat a little olive oil, then add the shallot, and garlic (if using)
Soften for a few minutes and add the tomatoes until they too soften
Add the green beans, and cook for a further 2-3 minutes, until they are warmed through
