Arugula Soup
The colder days are coming, but we have you covered with a delicious arugula soup.
This flavourful soup will warm you up on these colder days, and give you all the vitamins and nutrients that you need to keep you healthy, as the seasons change.
Ingredients (serves 4)
1 onion, chopped
3 cloves of garlic, chopped
700g zucchini, chopped (skin on)
300g arugula, chopped
1L vegetable broth
1 tablespoon olive oil
salt and pepper to taste
Method
Heat oil in a large pot on medium heat
Add the onions and cook for about 3 minutes, until softened
Add the chopped zucchini and the garlic, and cook for a few more minutes until the zucchini starts to soften
Add the broth, then bring to the boil
Reduce the heat and let it simmer for 15 minutes, then add the arugula and let it simmer for another 5 minutes
Blend it and add salt and pepper to taste
