Energy Balls
These energy balls are so unbelievably satisfying, and most definitely hit that sweet spot!
They are packed with great nutrients and different flavors that make a big impact. Make a big batch and store them in an air tight container in your fridge: your week of snacks is sorted!
Ingredients (makes 12)
250g pitted dates
55g oats
30g sunflower seeds
30g pumpkin seeds
30g desiccated coconut
1 tablespoon of coconut syrup
Method
Pulse the sunflower and pumpkin seeds in a food processor until finely chopped
Add the rest of the ingredients and pulse until fully blended
Take a heaped teaspoon of the mixture and roll into a ball
Roll the ball in a little extra desiccated coconut
