Homemade Pesto
Simple and delicious, pesto is such an easy addition to any pasta or salad to give it a little something more.
Making your own is so quick and easy, and also means that you can be mindful of which ingredients you use and where they come. If you make a bigger batch you can refrigerate in a jar like this great IKEA one (we’ve linked to the French website, but you can find this on whichever store you visit), which is our go to. You can also freeze in ice cube trays, but if you do this consider making a cheese-free version, as cheese tends to not freeze so well.
Ingredients
120g of basil
55g freshly grated parmesan
40g pine nuts
3 cloves of garlic, roughly chopped
8 tablespoons olive oil
salt and pepper to taste
Method
Place the basil and pine nuts in a food processor and pulse until both have blended
Add the cheese and garlic and pulse again until fully combined
Add the olive oil little by little to avoid it separating
Add salt and pepper to taste
