Tapenade
Summer is well and truly upon us, and as the evenings are warmer and longer, what could be better than to enjoy an aperitivo with friends.
Tapenade is a traditional Provençal, olive-based spread, that brightens up any aperitivo, sandwich or salad! You can use green or black olives, depending on your preference.
Ingredients (serves 6)
200g pitted olives (green or black)
1 tablespoon capers
2 anchovy fillets
3 tablespoons of olive oil
2 cloves garlic
juice of one lemon
Method
Place all the ingredients in a food processor and blitz until coarsely chopped
Grind some fresh pepper and mix
Serve with bread or crackers
