Turmeric Scrambled Eggs
Turmeric is a fantastic addition to your diet.
It is a powerful antioxidant and anti-inflammatory, so particularly great to use in the colder months, when our immune systems are a little more fragile.
Our favorite, and quick and easy way to get into lunch on the go, is adding it to your scrambled eggs.
Ingredients (serves 2)
coconut oil
4 eggs
2tsp turmeric
salt and pepper to taste
1 garlic clove, finely chopped (optional)
spinach or kale (optional)
Method
Heat a little coconut oil in a frying pan on a medium heat
If using the garlic, sautée it lightly for a few minutes
You can also add spinach or kale and cook until it wilts
Meanwhile whisk the eggs and the turmeric together, and add salt and pepper to taste
Add the egg mixture to the pan, and stir continuously for approximately 5 minutes, or until you have reached the desired consistency for your eggs
Serve on some delicious wholewheat bread, and/ or with a side of avocado
