Gluten & Dairy Free French Toasts

No gluten and no dairy for breakfast, please!

Having a strict diet can be a hassle for lots of us, especially when wanting to cook a yummy breakfast for other people also having their own food intolerances. Therefore, we're happy to share with you an easy recipe which will (hopefully!) content everyone around your table on a Sunday morning!

Ingredients (Serves 2)

  • 4 slices of gluten-free toasts

  • 2 eggs (if you are avoiding eggs, you can also use ½ a medium Banana, very well mashed)

  • 120ml almond milk

  • 1 tsp ground cinnamon

  • 1/2 teaspoon vanilla extract

  • 1 tbsp organic maple syrup

  • 1 tbsp of avocado or coconut butter (or any other dairy-free alternative you enjoy)

Method

  • In a bowl big enough to fit your slices of toasts, add the eggs, almond milk, cinnamon, vanilla extract, and maple syrup

  • Add the plant-based butter to a medium to large pan over medium heat

  • Dip the toasts into the milk mixture on both sides, so that the bread is well coated, but without leaving it for too long as it could break

  • Place the pieces of toast on the pan (as much as you can fit) and cook on both sides until they have a nice golden color (around 2 minutes)

  • Serve hot, with fresh fruits (and/or spreads that your guests can enjoy!)
